  • كوب ماء
  • زبدة

Method

  1. Peel the eggplant leaving a little skin, sprinkle with salt, then deep-fry in plenty of hot oil until cooked; remove from the oil and let drain.
  2. Prepare the Sheikh-style eggplant filling: sauté the chopped onion until soft, then add the meat and stir until it dries out.
  3. Sprinkle spices and salt to taste and stir until the filling is cooked.
  4. Make a lengthwise slit in the middle of each eggplant with a knife and stuff it with the filling, then arrange the eggplants in a baking tray.
  5. In a pot, put two chopped tomatoes with tomato sauce, 1 cup of water, and a little salt and mix; bring to a boil, then add a small piece of butter, let it melt, and remove the tomato sauce from the heat.
  6. Pour the sauce over the arranged eggplants in the tray and put it in the oven for about 10 minutes only.
  7. Serve the Sheikh-style stuffed eggplant with rice with vermicelli or plain white rice, as desired.
