Kabsa is one of the most popular and delicious dishes. Here is an easy way to make it with fish fillet, and the result is wonderful.

Ingredients

  • 1 kilo fish fillet
  • 3 cups basmati rice
  • 1/2 cup corn
  • 1/2 cup raisins
  • 1 large head of garlic
  • 2 onions
  • 1 large bunch fresh coriander
  • 2 tablespoons sweet pepper paste
  • 2 tablespoons fish seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried coriander
  • Salt, to taste
  • Nuts, as desired
  • 1/2 cup vegetable oil

Method

  1. Finely chop the coriander and garlic.
  2. Take 2 tablespoons of the mixture and set aside, then place the rest in a bowl with 2 tablespoons of oil, 1 tablespoon fish seasoning, salt, and sweet pepper paste, and mix well.
  3. Coat the fish fillet with this mixture and arrange it in a baking tray.
  4. Add 1/4 cup of water to the tray, then grill the fish in the oven until cooked through; it should take no more than 15 minutes.

  5. Start preparing the rice. Add a little oil or ghee to a pot over medium heat and fry the nuts, then remove them and set aside.
  6. In the same oil or ghee, add the finely chopped onion and cook until softened, then add the remaining coriander and garlic and stir for about 5 minutes.

  7. At this stage, add the raisins, if using, and stir, then add the corn and the remaining spices and stir before adding the rice.
  8. Adjust the salt and add the water, using 2 cups of water for each cup of rice, then stir briefly.
  9. When the water comes to a boil, reduce the heat and cover the pot until the rice is cooked.
  10. Transfer the rice to a serving platter, arrange the grilled fish fillet on top, and garnish with the fried nuts.
  11. Fish fillet kabsa can be served with fattoush or salad.
