Harissa is one of the most delicious Arab sweets. Besides being tasty and perfect for serving guests, it is very easy to make, and the result is even better than the best sweet shops.

Ingredients

  • 3 cups coarse semolina
  • 1 cup shredded coconut
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons ghee
  • 2 tablespoons rose water
  • 2 tablespoons orange blossom water
  • 2 tablespoons milk powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Syrup with ghee:
  • 4 cups sugar
  • 4 cups water
  • 1/2 teaspoon citric acid or the juice of half a lemon
  • 1 tablespoon ghee
  • For the top:
  • Nuts, soaked beforehand for half an hour in clean water, drained, and dried
  • In a pot over the heat, combine the water and sugar and wait until they come to a boil.
  • Reduce the heat and add the lemon juice. Let it simmer gently for 7 minutes.

Method

  1. Mix the harissa ingredients and stir well until the mixture is homogeneous. You should get a soft, spreadable batter, not a stiff or hard one. Add a little more water if needed.
  2. Grease the tray with tahini and spread the mixture in a suitable baking tray; the sides should be short, not high.
  3. Let it rest for 30 minutes to 1 hour.
    Timers: 30 min, 60 min
  4. Cut the harissa in the tray before baking and add nuts on top, if desired.
  5. Place the tray on the middle rack in a hot oven at 180°C until it takes on color from the bottom, then brown it from the top.
  6. When the top of the harissa tray is browned, remove it from the oven and cut along the original cuts again, then pour the hot syrup over it immediately.
  7. Serve the harissa once it has absorbed the syrup well and cooled to room temperature.
  8. After the time is up, add the rose water and ghee, stir, and turn off the heat immediately.
  9. The syrup must be added hot as soon as the harissa tray comes out of the oven.
