  • 1 onion
  • 3 garlic cloves
  • 2 tomatoes
  • 1 tablespoon Kabsa spice mix
  • 1 teaspoon chicken spice
  • 1 chicken stock cube
  • salt
  • 6 bone-in chicken pieces - adjust quantity as desired
  • 1 carrot
  • 2 bell peppers (mixed colors)
  • corn
  • 3 cups rice
  • nuts for garnish, as desired

Method

  1. Sauté the finely chopped onion, add the garlic and sauté until softened, then add the chopped tomatoes.
  2. Add the Kabsa spices, chicken spice, chicken stock cube, and salt to taste...
  3. Add the chicken pieces to fry with the mixture until they take the desired color, then add enough water to cover the ingredients.
  4. Leave the chicken in the water until cooked, then remove and set aside. Cook the washed and drained rice using the chicken boiling water to cook the rice. Add grated carrot, diced sweet bell peppers cut into small squares, and corn to the rice while cooking.
