Ingredients:

1 onion

\n

3 garlic cloves

\n

2 tomatoes

\n

1 tablespoon Kabsa spice mix

\n

1 teaspoon chicken spice

\n

1 chicken bouillon cube

\n

salt

\n

6 bone-in chicken pieces, or to taste

\n

1 carrot

\n

2 bell peppers

\n

corn

\n

3 cups rice

\n

nuts for garnish, optional

\n

\n

\n

Preparation:

\n

We sauté the onion, finely chopped, then add the garlic and cook until they soften, then add the chopped tomatoes.

\n

Add the Kabsa spice, chicken spice, bouillon cube, and salt to taste.

\n

Add the chicken pieces to brown with the mixture until the color develops, then add enough water to cover the ingredients.

\n

Let the chicken simmer until cooked, then remove and set aside. Cook the washed and drained rice, using the chicken-simmering water to cook the rice. When cooking the rice, add the carrot (grated), colorful bell peppers cut into small cubes, and corn.

\n

In the meantime, place the chicken pieces in the oven and broil to brown.

\n

When serving, spoon the rice into a wide dish and place the chicken on top, with the fried nuts.
