Chinese Noodles with Chicken and Vegetables

Ingredients

• Chinese noodles 500 g
• Chicken breasts 500 g (or 1/2 kg)
• Carrots
• Cabbage
• Green, red, or yellow bell pepper
• Fresh or canned mushrooms
• Spring onions (or regular onion)
• Broccoli
• 5 garlic cloves
• Salt
• Seven-spice mix
• Vegetable oil
• Sauce:
• 1/2 cup soy sauce
• 1 tbsp honey
• 1 tsp hot chili sauce (or to taste)

Method

1. Rinse the chicken breasts and cut them into thin long strips. Add salt and seven-spice mix, toss, and set aside.
2. Cut the vegetables into thin long strips.
3. In a skillet over medium heat, add a little oil and cook the chicken first, stirring until done, then set the chicken aside.
4. Meanwhile, cook the noodles according to the package instructions.
5. In the same pan you used for the chicken, add the carrots and stir, then add the cabbage, bell pepper, garlic and onion gradually, stirring as you go.
6. Finally add the broccoli so it retains its bright green color.
7. When all the vegetables are cooked—being careful not to overcook them and keeping them slightly crisp—return the chicken to the pan and stir together with the vegetables.
8. In a separate bowl, mix the soy sauce with the honey and chili sauce well. Add the hot cooked noodles on top of the vegetables and chicken and toss gently, being careful not to break the noodles.
9. Pour the sauce over the top and serve the noodles with the chicken and vegetables.
