Ingredients

  • Chicken cut into 4 pieces
  • Whole spices for boiling (cinnamon sticks - cardamom - cloves - star anise - bay leaves)
  • 2 white onions, thinly sliced
  • Large can of tomato sauce or tomatoes
  • Mixed spices to taste (curry - paprika - ground cinnamon - black pepper - salt)
  • 2 cups rice
  • 3 cups boiling water

Method

  1. Boil the chicken with the boiling spices until fully cooked
  2. Fry the onions in corn oil until they soften and cook, then add the sauce and spices... sauté them together for five minutes and turn off the heat
  3. Season the chicken pieces on both sides with half of the onion-sauce mixture and place them in an ovenproof glass dish with a little of the chicken cooking liquid and brown them under the grill
  4. Wash the rice and soak it in hot water for fifteen minutes
  5. Pour the boiling water over the remaining onion-sauce mixture (you can use the chicken's cooking water or plain water), then add the drained rice and leave them on high heat until the water evaporates.... reduce the heat and leave them for 20 minutes or more until the rice steams and cooks (placing a rice towel under the lid)
