- Medium-sized cauliflower (zahri)
- 2 carrots
- 1 large eggplant
- Ground meat optional
- 1 teaspoon maqluba spice
- A pinch of black pepper
- A pinch of seven-spice mix (baharat)
- A pinch of ground cinnamon
- Meat pieces suitable for boiling
- 2 cups rice
- Nuts for garnish

Method
- Wash the cauliflower well with hot water then fry it in hot oil. Also fry the diced carrots and the medium-sized eggplant. You can add or reduce any of the ingredients according to taste and need.
- Boil the meat with aromatics until tender then set it aside... if desired you can add ground meat to the cauliflower maqluba or omit it because of the boiled meat pieces; fry the ground meat and mix it with the maqluba spice and the other assorted spices.
- Add the washed rice with salt. Each cup of rice needs 1 and a half cups of water. Add the fried vegetables as well and stir gently... when the water boils reduce the heat and let the maqluba mixture cook gently.
- When serving place the meat on top and garnish with nuts as desired...
