Stuffed zucchini and grape leaves with lamb — a classic Arab mahshi recipe that almost every home cook knows, each with her own touch. Here’s a new version we add to our long list of stuffed-vegetable recipes.

Ingredients

Start here, then move straight into the method.

  • 1 kg zucchini
  • Green grape leaves
  • Pieces of lamb, bone-in or boneless
  • Tomato sauce to taste, or about 2 tablespoons
  • Filling
  • 1 cup Egyptian rice (washed and drained)
  • 1 small ripe tomato
  • 250 g minced meat
  • 1 teaspoon seven-spice mix (baharat)
  • Salt to taste
  • Vegetable oil

Method

Follow the cooking sequence without leaving the page.

  1. Place the large pieces of meat in the bottom of the pot and cook them, stirring until the water dries out and the meat changes color.
  2. Previously... prepare the filling by mixing the washed and drained rice with the minced meat, a drizzle of oil, the spices, and salt.
  3. Scoop the zucchini, wash them, and let them drain.
  4. Boil the green grape leaves for five minutes, then drain them and let them cool.
  5. Stuff each zucchini up to three quarters full and roll the grape leaves.
  6. Arrange the grape leaves over the pieces of meat in the pot and place the zucchinis on top of them.
  7. Dissolve the tomato paste in enough water to cover the pot's contents and add salt as well.
  8. Cover the stuffed zucchini and grape leaves with meat with the water-and-sauce mixture and place the pot over high heat until they boil.
  9. Reduce the heat and leave them to cook for at least one and a half hours so they cook through.
