Stuffed Zucchini with Red Sauce

Ingredients

  • 1 kilo zucchini
  • 2 tomatoes
  • tomato sauce
  • water
  • Filling
  • 250 g minced meat
  • oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed with a small piece of fresh green ginger
  • 1 small green sweet pepper, finely chopped - optional
  • spices
  • salt

Method

Follow the cooking sequence without leaving the page.

  1. Put a little oil in a pan over the heat and sauté the meat
  2. Immediately add the chopped onion, crushed garlic and ginger and sauté until the meat changes color
  3. Add the chopped pepper at this stage and continue stirring until the filling is cooked
  4. Sprinkle spices to taste and add the salt last, stir and turn off the heat
  5. Trim the zucchini, wash it and drain it well in advance
  6. When the filling cools slightly, start stuffing the zucchini
  7. Fry the stuffed zucchini in a little oil or in plenty of oil until their color changes, without overcooking them
  8. Arrange the zucchini in a Pyrex or baking dish and add tomato sauce diluted with water and the chopped fresh tomato (do not add too much sauce because fresh tomato has been added)
  9. Cover the Pyrex or baking dish with aluminum foil and put it in the oven until the sauce thickens and the zucchini are cooked
  10. Serve stuffed zucchini with rice and vermicelli
