Stuffed zucchini is one of the lightest and tastiest dishes kids love, by the way! It is best to choose small zucchini for this recipe.

Ingredients:

1 kilo zucchini 2 tomatoes tomato sauce water Filling: 250 g minced meat oil 1 onion, finely chopped 2 cloves garlic, crushed with a small piece of fresh green ginger 1 small green sweet pepper, finely chopped - optional spices salt

Method:

Put a little oil in a pan over the heat and cook the meat, stirring.
Add the onion and the garlic crushed with the ginger right away, and stir until the meat changes color.
Add the chopped pepper at this stage and keep stirring until the filling is cooked.
Season with spices as desired and salt at the end, then stir and turn off the heat.
Hollow out the zucchini, wash it, and drain it well from the water beforehand.
When the filling has cooled slightly, start stuffing the zucchini.
Fry the stuffed zucchini in a little oil or plenty of oil until the color changes, without overcooking.
Arrange the zucchini in a Pyrex dish or tray, then add the tomato sauce diluted with water and the chopped tomatoes (do not use too much sauce because of the added tomatoes).
Cover the Pyrex dish or tray with aluminum foil and place it in the oven until the sauce thickens and the zucchini is cooked through.
Serve the stuffed zucchini with rice with vermicelli.
