Gozzi Parcels with Samosa Dough

Ingredients

Start here, then move straight into the method.

  • 3 cups basmati rice or 2 cups Egyptian rice
  • 1 cup cooked peas
  • 1 cup chopped, cooked carrots
  • 250 g minced meat
  • 200 g mixed toasted nuts
  • 2 tablespoons ghee or butter
  • pinch of vegetable oil
  • a handful of pistachios (optional)
  • 2 teaspoons salt, or to taste
  • 1 teaspoon black pepper
  • 6 cups hot water (if using basmati rice... adjust the amount of water if using Egyptian rice)

Method

Follow the cooking sequence without leaving the page.

  1. Wash the rice well and drain it.
  2. In a pot over the heat, put the ghee or butter with a splash of vegetable oil until the ghee melts, then stir with the rice.
  3. After a little stirring, add the water, salt, and pepper, half the quantity of peas and carrots, and half the quantity of the nuts, and stir.
  4. Stir and let the water come to a boil, then leave the rice on low heat and cover the pot until it cooks.
  5. In a frying pan, put a little oil and sauté or stir the meat with the remaining peas and carrots with a sprinkle of salt and pepper... and the filling will be ready.
  6. Prepare a bowl or cup the size of your hand's grip or the size you prefer... and lay several sheets of the pastry in the cup on top of each other to create multiple layers.
  7. Place a spoonful of the meat-and-vegetable filling and distribute some nuts, then fill the cup with the seasoned rice.
  8. Fold the edges of the pastry sheets over one another and invert the cup to release one ouzi parcel.
  9. Repeat the same process until the mixture is used up.
  10. Place the ouzi parcels on a baking tray and brush the top of each with butter or ghee, then put them into a 150°C oven for 10 minutes or until they take on a golden color.

  11. Garnish the gozzi parcels with pistachios and the remaining fried nuts and serve them with yogurt-and-cucumber salad.
