Gozzi parcels, or ouzi, with thin, crispy samosa dough ... a tasty recipe that whets the appetite .. here is the step-by-step method

3 cups basmati rice or 2 cups Egyptian rice

1 cup cooked peas

1 cup chopped, cooked carrots

250 g minced meat

200 g mixed toasted nuts

2 tablespoons ghee or butter

pinch of vegetable oil

a handful of pistachios (optional)

2 teaspoons salt, or to taste

1 teaspoon black pepper

6 cups hot water (if using basmati rice... adjust the amount of water if using Egyptian rice)

Note: This amount makes 5 pieces

Wash the rice well and drain it.
In a pot over the heat, add the ghee or butter with a pinch of vegetable oil until the ghee melts, then stir in the rice.
After stirring for a short while, add the water, salt, pepper, half the peas and carrots, and half the nuts, then stir.
Stir and let the water come to a boil, then reduce the heat and cover the pot until the rice is cooked.
In a pan, add a little oil and sauté or stir-fry the meat with the remaining peas and carrots and a pinch of salt and pepper... the filling is now ready.
Prepare a bowl or cup about the size of a fist, or whichever size you prefer... and line several sheets of pastry in the cup, one on top of the other, to create several layers.
Add a spoonful of the meat-and-vegetable filling, sprinkle over some nuts, then fill the cup with the fluffy rice.
Fold the edges of the pastry sheets over each other, then invert the cup to release a gozzi parcel.
Repeat until all the mixture is used up.
Place the parcels on a baking tray and brush the top of each one with butter or ghee, then bake at 150°C for 10 minutes or until golden.
Garnish the gozzi parcels with pistachios and the remaining fried nuts, and serve with yogurt and cucumber salad.
