Zucchini with meat — a delicious main or side dish

Ingredients

  • 1 kg zucchini
  • 1/2 kg tender meat (stewing cuts), cubed
  • 2 tablespoons ghee (samna)
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 tablespoons salt for soaking the zucchini
  • Salt to taste

Method

  1. Wash the zucchini well, then cut them into cubes, sprinkle them with salt and toss together.
  2. Leave them salted for about three hours so all the water drains and the zucchini soften; then drain them and squeeze them by hand and set aside.
  3. In a pot, heat the ghee and oil and fry the pre-cut meat cubes, stirring; then add the seasonings and mix well.
  4. Cook until the meat cubes are well done... you can add a little water and simmer until all the liquid evaporates.
  5. When the meat is cooked and the liquids have dried, add the zucchini pieces and stir very gently.
  6. Leave the zucchini with the meat over medium heat until they are cooked.
  7. Garnish the zucchini with meat with fried pine nuts and serve hot to eat with bread... serve yogurt on the side if desired.
