Zucchini with meat — a delicious main or side dish
Ingredients
- 1 kg zucchini
- 1/2 kg tender meat (stewing cuts), cubed
- 2 tablespoons ghee (samna)
- 2 tablespoons vegetable oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 4 tablespoons salt for soaking the zucchini
- Salt to taste

Method
- Wash the zucchini well, then cut them into cubes, sprinkle them with salt and toss together.
- Leave them salted for about three hours so all the water drains and the zucchini soften; then drain them and squeeze them by hand and set aside.
- In a pot, heat the ghee and oil and fry the pre-cut meat cubes, stirring; then add the seasonings and mix well.
- Cook until the meat cubes are well done... you can add a little water and simmer until all the liquid evaporates.
- When the meat is cooked and the liquids have dried, add the zucchini pieces and stir very gently.
- Leave the zucchini with the meat over medium heat until they are cooked.
- Garnish the zucchini with meat with fried pine nuts and serve hot to eat with bread... serve yogurt on the side if desired.
