Zucchini with bulgur is a traditional, old-fashioned dish — a nourishing, light recipe to add to your menu.
Ingredients
- 3 large zucchini
- 3 onions
- 1 cup coarse bulgur
- 1 tablespoon tomato paste or tomato sauce
- Salt
- Black pepper

Method
- First... finely chop two onions and fry them in a little oil until they turn slightly golden.
- Add the zucchini cut into cubes and sauté until they soften.
- Add one cup of washed and drained bulgur, stir, then add 1½ cups boiling water, a tablespoon of tomato paste, salt, and spices, and let them simmer over low heat.
- On the side... chop the third onion and fry it in oil until it browns, being careful not to burn it. Then add half a cup of water and let it boil a little, and mash the onions slightly with a spoon.
- Strain them and pour only the broth over the zucchini and bulgur mixture and stir.
- Cover the pot and leave the zucchini-bulgur baqlah on low heat until the bulgur is cooked.
