Method
- Cut the eggplant lengthwise with its skin on and leave a little of the flesh inside to help the eggplant hold together.
- Boil the eggplant slices for about 10 minutes in water with salt. Remove them from the water and set them aside until they cool and dry well.Timers: 10 min
- Prepare the beetroot and boil it, then set aside. Also boil the carrots and potatoes and cut the vegetables into slices. You can add any other vegetables available as desired.
- Lay out the eggplant slices and place inside them the vegetables: boiled beetroot cut lengthwise, fresh mushrooms, corn, and the boiled carrots and potatoes cut into slices...
- Roll the eggplant around the various vegetables. Arrange the eggplant sushi on a serving plate and serve with lemon-garlic sauce and olive oil.
