Vegetable Rice (Rice with Vegetables)

Ingredients

Start here, then move straight into the method.

  • 2 cups basmati rice
  • 3 cups water
  • 3 tablespoons oil
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • A knob of butter
  • Mixed vegetables: peas, carrots and thinly sliced green beans, or other vegetables to taste
  • Chicken or vegetable bouillon cube (Maggi)

Method

Follow the cooking sequence without leaving the page.

  1. First step: Rinse the rice with cold water. This step is important to remove dirt and starch and to prevent the grains from sticking together during cooking.
  2. Second step: Soak the rice so it won't need a long time to cook and will cook through well. Soak it in hot water for 15 to 20 minutes before cooking.

  3. Third step: Drain the rice well after soaking. Leave it in a sieve for about 5 minutes to preserve the shape and texture of each grain after boiling.

  4. Fourth step: Heat the oil in a pot over medium heat and add the chopped vegetables as desired with Maggi seasoning, and sauté for five minutes to preserve the vegetables' color and keep them fresh.
  5. Then add the rice. Gently stir it, then add water, salt, and lemon juice to enhance the rice's color so it becomes bright white.
  6. When the water boils, add a knob of butter and cover the pot. You can place a cloth made for rice under the lid.
  7. Let the vegetable rice simmer over low heat for 17 minutes until cooked.

  8. Fifth step: After the time has passed, turn off the heat and let the rice rest for 10 minutes without stirring so the grains do not stick together and to preserve the rice's texture.

  9. Finally, serve the vegetable rice. It can be served as a main dish or with roasted chicken and grilled kebabs as desired.
