  • Dough
  • 2 cups flour
  • 2 tablespoons vegetable oil
  • 3/4 cup water
  • 1 tablespoon yeast
  • 2 tablespoons sugar
  • 1 tablespoon nigella seeds (black seed)
  • 1 tablespoon vinegar
  • Egg
  • 1/4 teaspoon salt
  • Or fried Arabic bread
  • The kebab
  • 450 g fillet beef or tender steak, sliced
  • 2 tablespoons tomato paste
  • 1/4 cup vinegar
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper
  • 1 teaspoon salt
  • 2 tablespoons hot chili paste
  • 1/4 cup water
  • Oil or ghee for frying the meat
  • 1 cup yogurt
  • 2 tomatoes, chopped
  • 1 clove garlic, crushed

Method

  1. First start by preparing the bread: put the yeast on the flour along with the sugar, salt, and oil.
  2. Add the water gradually while continuously kneading until you obtain a cohesive dough; you can skip the kneading and baking stages by using ready-made Arabic bread after frying it.
  3. Meanwhile, add the vinegar to the meat and leave it for about a quarter of an hour.
  4. In a pan over heat, put the oil and add the meat. When the meat is almost cooked, add the salt and spices to taste.
  5. Remove the meat from the pan and set aside, then heat fresh oil and add the tomatoes, then stir in the tomato paste and hot chili paste.
  6. Let the tomato mixture simmer for a while until the color changes, then add the water and meat and leave them on the heat for an additional 10 minutes.
  7. In an oiled baking tray, spread out the dough and prick it with a fork.
  8. Beat the egg with the vinegar and brush the dough with the mixture, then sprinkle nigella seeds (black seed) on top.
  9. Place the tray in the oven at 180°C until the bread is cooked.
  10. In a bowl, mix the yogurt, garlic, and salt well....
  11. After the bread is baked, cut it into squares, brush with melted butter, and arrange it as a bottom layer on the serving plate; spoon over the yogurt-garlic mixture, then place the meat slices with the sauce on top, and garnish with parsley.
