  • 4 cups broad green lentils
  • 8 cups water
  • 5 dry onions
  • 1 cup coarse bulgur
  • Salt
  • 1/4 cup vegetable oil

Method

  1. Warm the oil and add the chopped onion with a pinch of salt; sauté until browned over medium heat.
  2. Be careful not to burn the onion; keep stirring over medium heat to avoid bitterness.
  3. Rinse the lentils well and drain them.
  4. Add the water and lentils to the browned onion and bring to a boil over medium heat. Once the lentils boil, reduce heat and simmer until cooked but not mushy.
  5. Rinse the coarse bulgur and place it in a fine sieve.
  6. Add the bulgur to the lentils and return to medium heat; simmer for a while for flavors to blend, then reduce heat and simmer until cooked.
