Ingredients

  • For the dough:
  • 1 1/4 cups liquid milk
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons turmeric or saffron powder
  • 5 cups white flour
  • 1 cup chicken flour or fine semolina
  • 1/2 cup toasted sesame seeds
  • 1 tablespoon ground anise
  • 1/4 cup nigella seeds
  • 1 teaspoon mastic
  • 1 tablespoon yeast
  • 1 tablespoon kaak spice mix
  • A pinch of salt
  • 1 tablespoon baking powder
  • Fat ingredients:
  • 1/2 cup vegetable oil and 1/2 cup ghee

Method

  1. Mix the sugar, milk, and turmeric, then place them in a saucepan over the heat until the sugar dissolves completely and the mixture cools slightly without getting too hot.
  2. In a large bowl, mix all the dry ingredients, then add the fats and rub everything together until the dry ingredients absorb all the ghee and oil.
  3. Finally, begin adding the milk mixture with the sugar and turmeric (as explained in the first step) and knead. Add the milk gradually.
  4. Let the dough rest for 2 hours, then start shaping the Al-Abbas cookies using the special molds.

  5. Arrange the pieces on baking trays and bake on the middle rack in an oven preheated to 180°C for no more than 12 minutes, until the top is lightly browned.

  6. Serve the Al-Abbas cookies after they have cooled completely to room temperature.
  7. Note: when kneading, the dough will be soft, but it will firm up after rising because the white flour and chicken flour will absorb all the liquids.
