Ingredients
- For the dough:
- 1 1/4 cups liquid milk
- 1 1/2 cups sugar
- 1 1/2 teaspoons turmeric or saffron powder
- 5 cups white flour
- 1 cup chicken flour or fine semolina
- 1/2 cup toasted sesame seeds
- 1 tablespoon ground anise
- 1/4 cup nigella seeds
- 1 teaspoon mastic
- 1 tablespoon yeast
- 1 tablespoon kaak spice mix
- A pinch of salt
- 1 tablespoon baking powder
- Fat ingredients:
- 1/2 cup vegetable oil and 1/2 cup ghee

Method
- Mix the sugar, milk, and turmeric, then place them in a saucepan over the heat until the sugar dissolves completely and the mixture cools slightly without getting too hot.
- In a large bowl, mix all the dry ingredients, then add the fats and rub everything together until the dry ingredients absorb all the ghee and oil.
- Finally, begin adding the milk mixture with the sugar and turmeric (as explained in the first step) and knead. Add the milk gradually.
- Let the dough rest for 2 hours, then start shaping the Al-Abbas cookies using the special molds.Timers: 120 min
- Arrange the pieces on baking trays and bake on the middle rack in an oven preheated to 180°C for no more than 12 minutes, until the top is lightly browned.Timers: 12 min
- Serve the Al-Abbas cookies after they have cooled completely to room temperature.
- Note: when kneading, the dough will be soft, but it will firm up after rising because the white flour and chicken flour will absorb all the liquids.
