Potato Puree Soufflé... a delicious and quick meal.

Ingredients

  • 1 kg boiled potatoes
  • 1/2 cup liquid milk
  • 1 tablespoon butter
  • Salt to taste
  • Crushed rusk or breadcrumbs for the top
  • Filling:
  • Minced meat
  • 1 onion, finely chopped
  • A pinch of seven‑spice mix
  • A pinch of salt
  • A pinch of sumac
  • Vegetable oil

Method

  1. Mash or purée the boiled potatoes with the milk and butter, add salt to taste and mix until smooth.
  2. Prepare the filling: sauté the finely chopped onion in a little oil until translucent, then add the minced meat and cook until it dries out and changes color.
  3. Add the spice mix, sumac and salt and stir.
  4. Leave the filling on the heat until it is fully cooked.
  5. When the filling is ready, divide the mashed potato mixture into two equal parts and spread the first part in a baking dish or glass Pyrex.
  6. Evenly spread the filling over the first layer of potatoes.
  7. Spread the second portion of mashed potatoes over the filling evenly until it is completely covered.
  8. Sprinkle crushed rusk or breadcrumbs over the top of the potatoes.
  9. Place the Pyrex or baking dish in the oven until it takes on a golden color on the top and bottom.
