Ingredients

  • whole turkey
  • 1/2 cup vinegar
  • 1/2 cup lemon juice
  • 1 head garlic
  • 1/4 cup oil or butter
  • chopped cilantro
  • chopped parsley
  • dried oregano or thyme
  • salt
  • pepper
  • paprika or sweet red pepper powder
  • turmeric
  • ground cumin
  • bay leaves or rosemary or any other spices as desired

Method

  1. Wash the turkey well and let it drain.
  2. Place the remaining ingredients in a blender and grind them until you have a smooth mixture.
  3. Separate the turkey skin from the meat and make slits all over the turkey.
  4. Spread the mixture well under the turkey skin.
  5. Place it in an oven roasting bag and leave it in the refrigerator overnight so the meat absorbs the mixture.
  6. The next day, put the bag on a baking tray and roast in the oven at 180°C for 3 hours.
  7. You can brown it after it is cooked by removing it from the roasting bag.
  8. Let the roasted turkey rest for half an hour before carving.
