Oven-baked chicken and rice with a mustard flavor... a distinctive-tasting, attractive dish

Ingredients

  • chicken pieces
  • bay leaves
  • vegetable oil
  • 2 tablespoons mustard
  • 1 tablespoon paprika or sweet ground red pepper
  • 1/4 teaspoon ground ginger
  • salt
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 tablespoon turmeric
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 2 cups long-grain rice, soaked and rinsed
  • 3 1/2 cups boiling water
  • Sauce for brushing the chicken:
  • 1 tablespoon mustard
  • a pinch of oregano
  • a pinch of saffron powder
  • juice of half a lemon
  • 1/2 tablespoon paprika
  • 1/2 tablespoon garlic powder

Method

  1. In a pot over the heat, add some vegetable oil and place the chicken pieces with 3 bay leaves
  2. In a separate bowl, mix 1 tablespoon of mustard with paprika, ginger, salt, oregano, black pepper and turmeric, then add this mixture to the chicken in the pot and stir well
  3. When the chicken begins to brown, add one finely chopped dry onion and sauté until the onion softens and the chicken browns
  4. Add grated tomatoes over them and stir, then leave for about 3 minutes to simmer
  5. Add enough water to cover them, cover the pot and simmer over low heat until cooked
  6. Remove them from the pot and set aside. In the same pot, add the drained rice and pour 3 1/2 cups boiling water with the second tablespoon of mustard, stir and cook until the rice is about three-quarters done, then transfer it to a baking tray
  7. Prepare the sauce to brush over the chicken pieces, brush them with a pastry brush and place them over the rice in the tray. Cover with aluminum foil and bake in the oven at 180°C on the middle rack until the rice is cooked
  8. Remove the foil and brown the top in the oven to color the chicken
  9. Serve the oven-baked chicken and rice with mustard alongside salad
