Ingredients

  • 6 eggs, room temperature
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups butter, room temperature
  • 1/2 cup milk
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 tablespoons cocoa powder
  • a pinch of salt
  • 1 teaspoon vanilla
  • zest of 1 lemon

Method

  1. Beat the butter with the sugar and vanilla until the mixture turns white.
  2. Add the eggs one at a time.
  3. Add the milk with lemon zest, then using a spoon add the flour gradually and mix with a spatula.
  4. Divide the batter into two portions — they don't have to be equal.
  5. Mix a small portion with cocoa and leave the other without cocoa.
  6. In the cake pan spread the white batter, add the cocoa mixture on one half, then use a fork to swirl the mixtures from bottom to top in the center of the pan.
  7. Bake the marble cake in a preheated oven at 180°C for 30 minutes or until it is cooked and risen, depending on your oven's strength.
  8. It is best not to open the oven at all while the cake is baking.
