Lebanese tabbouleh — simply the best
Ingredients
- 3 bunches of parsley (flat-leaf preferred)
- 1 bunch fresh mint
- 1 bunch green onions (about 6 stalks)
- 4 ripe tomatoes
- 1/4 cup fine bulgur
- olive oil
- salt
- lemon, to taste

Method
- Wash the herbs and vegetables and drain thoroughly so no water remains.
- Finely chop the tomatoes and mix them with the bulgur until the bulgur becomes soft.
- Finely chop the remaining herbs and vegetables and add them as well.
- Add salt and lemon to taste — you will typically need the juice of about 2 lemons or more, according to preference.
- Drizzle with olive oil.
- Mix the ingredients well and transfer the tabbouleh to a serving dish.
- Serve with lettuce or cabbage leaves and it can also be eaten with a spoon.
