Baked tray kibbeh... a very special recipe

Ingredients

  • 1 kg lean beef
  • 1.5 kg fine bulgur
  • 2 tablespoons kibbeh spice
  • 1 tablespoon dried mint
  • 1/2 tablespoon black pepper
  • 1 teaspoon ground cumin
  • 1 medium onion, grated
  • Salt
  • A little oil
  • Filling:
  • 1 kg ground meat
  • 120 g butter
  • 1 teaspoon dried mint
  • 2 large onions, chopped
  • Nuts to taste (optional)

Method

  1. Begin preparing the filling: place the ground meat in a pan over medium heat and stir until cooked and all liquids have evaporated.
  2. Add the butter and salt and stir well, then add the onion and continue cooking until the onion softens and is cooked through.
  3. Then add the dried mint and the nuts, stir, and set aside to cool completely.
  4. Start preparing the kibbeh dough: put the bulgur in a bowl, wash it with water, and leave it in the water for 10 minutes.

  5. Squeeze the bulgur well to remove the water, then add the lean beef and the remaining ingredients and knead thoroughly.
  6. Work this dough with your hands or a kibbeh machine until you obtain a cohesive dough. You can add cold water if needed so the dough is not tough.
  7. Divide the dough into two parts. Grease the baking tray with a little oil and spread the first portion of the dough to cover the entire tray.
  8. Add the filling. Then roll out the second portion of kibbeh between two sheets of plastic wrap and lay it over the filling, pressing lightly.
  9. Brush the surface of the kibbeh with a little oil and cut as desired.
  10. Bake in the oven at 180°C for about 45 minutes until the top is browned.
