Sahlab — one of the most delicious hot drinks we enjoy in cold weather
Ingredients
- Four cups milk
- Three tablespoons cornstarch (cornflour)
- 1 teaspoon vanilla
- 1/4 cup sugar
- 1 teaspoon ground mastic (or ground sahlab resin)
- A splash of orange blossom water or rose water — optional
- For garnish:
- Cinnamon
- Desiccated coconut
- Pistachios

Method
- Mix the starch with a little water in a small cup and stir well.
- Put the milk in a pot over the heat, then add the starch mixture, vanilla, and sugar, and stir.
- Stir the mixture constantly until it boils, then add the mastic and orange blossom water and stir.
- Pour the sahlab into glasses or cups and garnish with cinnamon, coconut, and pistachios.
