Ingredients

  • 3 large potatoes
  • 1 large onion
  • 1/2 kilo ground meat
  • Salt, to taste
  • 1 grated carrot
  • 1 green sweet pepper, chopped
  • 1/2 cup mushrooms, chopped
  • 1 teaspoon mixed spices
  • 3 tablespoons tomato paste
  • Cheese slices, as desired

Method

  1. Peel the potatoes, wash them, and cut each one in half lengthwise. Use a spoon to hollow out the inside of each potato, leaving the sides or edges thick.
  2. Fry the potatoes in plenty of oil until golden brown. Drain well.
  3. Meanwhile, prepare the filling. Sauté the chopped onion in a little oil until softened. Add the meat and a pinch of salt, and stir until the meat starts to change color.
  4. Add the carrot, pepper, mushrooms, and spices and cook until the ingredients are done. Add 1 tablespoon of tomato paste with 1/2 cup water and let the potato filling simmer for about five minutes. Set aside to cool.
  5. Place a slice of cheese inside each potato. Spoon the filling into the potatoes. Arrange the potato boats in a baking tray.
  6. Add the sauce made from 2 tablespoons of tomato paste dissolved in 1 cup of water. Place the tray in a hot oven for ten minutes. Then place cheese slices on top of the potato boats and brown them in the oven.
  7. Serve the potato boats alongside green salad. Rice can also be served with them.
