How to Make Meftoul with Tomatoes
A Palestinian vegetarian staple, maftoul with tomatoes (also called kuskuson in the local dialect), a tasty and popular traditional dish.
Ingredients

- 1 kilo ready maftoul
- 1 dry onion
- 1 tablespoon vegetable oil
- Salt
- 8 tomatoes
- 1 tablespoon ghee
- Note
- Maftoul is a dough rolled into small round grains. It is similar to the maghrebiya known in the Levant and to couscous found in the Maghreb.
Method
Follow the cooking sequence without leaving the page.
- Rinse the maftoul and set it aside.
- Finely chop the onion and sauté it in the pot with the vegetable oil until it is lightly browned.
- Blend the tomatoes with an electric blender and add them to the onions; let them boil and reduce, then add salt and finally add the maftoul with a tablespoon of ghee; stir and simmer over low heat.
- Cook until the maftoul grains open up and are fully cooked. Serve the maftoul with tomatoes on serving plates alongside pickles, peppers, and olives.
