- 2 cups cooked chickpeas
- 1 tablespoon yogurt
- 1/2 cup tahini
- 3 tablespoons vegetable oil
- 1 clove garlic, crushed
- A pinch of salt
- A pinch of citric acid
- 3 ice cubes
Method
- Boil the chickpeas, grind them, and refrigerate them overnight. One of the key secrets to successful hummus is chilling it for a full night.
- The next day put the ground chickpeas in a food processor and add yogurt, tahini, salt, and crushed garlic. Blend well, then add vegetable oil, lemon salt (citric acid), and finally ice cubes.
- Continue blending until the chickpea mixture becomes light and increases in volume.
