Ingredients

  • 4 kg milk
  • 1 kg yogurt
  • Nigella seeds (black seed), amount as desired

Method

  1. Place the milk on the heat and when it boils add the yogurt, then reduce the heat.
  2. Keep the milk and yogurt on low heat, watching constantly, until the whey separates from the curd; add nigella seeds as desired.
  3. Let the mixture boil well until the liquid turns a very light yellow.
  4. Pour the mixture into a bowl lined with a very fine cloth such as cheese muslin and gently press until smooth.
  5. Cover the cheese and place a heavy weight on top, leaving it for 30 minutes, then cut it as desired.

  6. Meanwhile prepare boiling salted water and then cool it; place the cheese in it and refrigerate.
