Ingredients

  • 1 kg lamb ribs
  • Aromatics/seasonings
  • 1 large onion for boiling
  • Tomato and onion for the oven
  • Salt
  • Spices:
  • Meat seasoning
  • Mixed spice blend
  • Black pepper
  • Ground cinnamon

Method

  1. Cover the ribs with water and put them on the heat; after boiling for only five minutes and their color changes from red to brown, discard the water and wash the ribs
  2. Then place the lamb ribs in a pot with seasonings as desired plus an onion and cover with water; it is important not to add salt to the boiling water so the meat does not toughen
  3. Boil the ribs for two hours over low heat, then drain them
  4. Place them in an oven tray and arrange slices of onion and tomato over them; sprinkle spices and salt, then pour a little of the cooking liquid over them
  5. Place the tray on the bottom of the oven at the highest temperature and roast for about an hour or until the liquid has evaporated from the ribs
  6. Serve immediately
