Ingredients

  • 1 kg green fava beans
  • A bunch of fresh cilantro
  • 1 onion (dry)
  • 1 small head of garlic
  • Salt, to taste
  • Vegetable oil
  • Lemon juice
  • Half a cup of warm water

Method

  1. Cut the fava beans into small or medium pieces and boil them with a pinch of salt to preserve the green color.
  2. Chop the onion and garlic finely and sauté them in a little vegetable oil until softened.
  3. Add the chopped cilantro to them and stir briefly.
  4. Add the drained cooked fava beans, stir, and then add water immediately.
  5. Let the fava with cilantro and garlic simmer over medium heat until cooked.
  6. Before turning off the heat, add lemon juice, stir, then remove from the heat.
  7. Serve this delicious vegetarian dish cold at room temperature or chilled from the refrigerator.
