Green Beans in Oil
Green beans in oil are a practical, tasty vegetarian dish, especially for families and kids. This traditional Levantine recipe is popular across the Levant.
Ingredients

- 1 kilogram green beans
- 1 onion, large
- 1 head of garlic
- 5 large tomatoes, peeled and chopped
- 1/4 cup vegetable oil
- plus vegetable oil for frying the green beans
- Salt and hot pepper to taste
Method
Follow the cooking sequence without leaving the page.
- Trim the ends of the green beans, wash them, and cut each bean into 2 or 3 pieces. Fry them briefly in oil, then place them on paper towels to absorb excess oil and set aside.
- Place the vegetable oil in a pot and sauté the chopped onion and garlic until they soften. Add the green beans, salt and tomatoes. You may replace some of the fresh tomatoes with a can of tomatoes plus 2 ripe tomatoes if desired.
- Stir the beans, tomatoes and onion well, then add enough water to cover all the ingredients.
- Cover the pot and cook over low heat for 30 minutes or until the green beans are tender and the sauce thickens.Timers: 30 min
