Easy Kunafa Recipe

A simple, tried-and-tested homemade recipe for making kunafa at home. You can use ready-made kunafa shreds in this recipe, or prepare the kunafa shreds at home using the accompanying recipe.

Ingredients

Start here, then move straight into the method.

  • 1/2 kilo kunafa shreds *
  • 400 g Akkawi cheese, salted type; soak it the day before to remove the salt, then drain
  • 200 g unsalted mozzarella cheese
  • 2 tbsp orange blossom water
  • 1 tbsp rose water
  • 1/4 cup sugar
  • 1 cup milk
  • 1/2 cup fine semolina

Method

Follow the cooking sequence without leaving the page.

  1. Grease a nonstick baking tray with 1 tablespoon of soft butter, then sprinkle the kunafa shreds into it and press down gently...
  2. Place the tray of kunafa in a preheated oven at 180°C, on the bottom heat, on the middle rack, until the edges start to turn golden...
  3. When the edges brown, set it aside or place it over low heat on the stovetop and rotate the tray on all sides until the edges are evenly browned...
  4. Put the cup of milk in a small saucepan inside a larger pot containing boiling water and heat the milk using a bain-marie. When the milk is warm, add the sugar and stir until dissolved...
  5. Add the cheese and stir occasionally until it becomes stretchy, then add the fine semolina gradually along with 1 tbsp rose water and 2 tbsp orange blossom water... Mix well until all the ingredients are fully combined...
  6. Pour the cheese mixture over the previously browned kunafa shreds and spread it out gently... Add a thin layer of the shreds over the cheese and along the edges and inside the sides so the cheese does not stick to the tray. Press lightly, then return it to the oven, this time turning on the top heat. It should not be too close to the flame. Leave it for about 5 minutes until lightly golden, then turn off the heat and leave it for about 10 minutes until set. Invert it onto a tray with a larger diameter and pour the syrup over it while it is hot.
