Ingredients
- Chicken, cut
- Chicken marinade mix:
- 2 cups buttermilk
- Garlic powder
- Paprika
- Salt
- Black pepper
- Curry
- Hot chili powder - optional
- Buttermilk substitutes
- Milk with lemon juice or vinegar
- or
- Ready-to-drink laban (liquid yogurt)
- Yogurt thinned with water
- For dredging before frying
- 2 cups flour
- 1/2 cup cornstarch
- Garlic powder
- Ginger powder
- A bowl of plain water to dip the chicken pieces

Method
- Make lengthwise slits in the chicken pieces with a knife.
- Mix the chicken marinade ingredients together and soak the chicken pieces in it.
- Cover and refrigerate for 3 hours, preferably overnight so the chicken absorbs the marinade well.
- When frying, mix the dredging mixture ingredients and take each piece of chicken, coating it with this mixture while pressing by hand so it is well covered with the flour and spices.
- Then tap the piece with a plate so the coating forms the rippled texture we want at the end.
- After tapping, dip the piece in the water for a few seconds, then return it to the flour mixture.
- Wrap and press it until the ripples form, then fry immediately (do not leave to sit for long) in plenty of hot oil, turning until cooked and golden brown.
