Ingredients

  • Half a kilo of flour, which equals 4 cups
  • 50 grams powdered milk, or the equivalent of 6 tablespoons
  • 50 grams granulated sugar, about 1/4 cup
  • 70 grams butter, room temperature, 1/4 cup
  • 10 grams yeast / 2 teaspoons
  • 1/4 teaspoon salt
  • 300 grams water, at room temperature, or as needed for the dough - equivalent to 1 1/2 cups
  • For brushing the dough
  • 50 grams butter, room temperature - 6 tablespoons
  • Ground cinnamon
  • Brown sugar
  • 3 teaspoons cocoa powder

Method

  1. We place the dry ingredients ... and mix them, then add the water and knead briefly, and finally add the butter ...
  2. The dough should be soft; set it aside to rest for about 15 minutes
    Timers: 15 min
  3. Roll the dough into a rectangle about 4 cm thick
  4. In a bowl, whisk the butter, cinnamon, sugar, and cocoa, then spread the mixture over the dough and brush it with it.
  5. Place the dough in a tray lined with parchment paper and let it rest for about 30 to 40 minutes

  6. Roll out the dough and fill it with the butter mixture
  7. Roll the dough into a log, then cut it lengthwise down the middle and twist the two halves together as shown in the accompanying picture, then place it in a rectangular loaf pan.
  8. Let the dough proof for 40 to 60 minutes.

  9. Bake the cinnamon babka in a 200-degree oven for 20 minutes or until cooked through, then serve.
