How to make Fatteh — a homemade version that can’t be beat
Ingredients
- 1 kg chickpeas, soaked in boiling water with 1 tablespoon baking soda — soak the chickpeas at least 12 hours
- Finely chopped parsley
- 4 cloves garlic
- Hot pepper (chili)
- Bread
- Salt
- 1 cup plain yogurt
- A pinch ground cumin
- 1 cup tahini
- Juice of lemon
- Minced meat - optional

Method
- After soaking the chickpeas, drain and rinse them, place them in a pot with fresh water, and simmer over medium heat until tender. The chickpeas will need about one hour to cook.
- In a deep bowl, place the bread cut into equal pieces — it is better if the bread is not fresh.
- In another bowl, take the desired amount of chickpeas and lightly mash them with a garlic masher, then moisten the bread with the chickpea cooking water.
- Sprinkle a pinch of salt over the mashed chickpeas, add yogurt, a pinch of cumin, and half a cup of tahini, and mix.
- Spread the chickpea mixture over the bread.
- Chop the parsley, pound the garlic, and chop the pepper, then mix them. Add half a cup of tahini, a pinch of salt, and lemon juice, and stir.
- Pour the fatteh into a serving dish and spread the parsley mixture over it.
- Top with the fried ground meat as desired and, if wanted, garnish with fried nuts.
