How to prepare Chicken Shawarma Marinade, a recipe that will have you making shawarma like a pro!

Ingredients
- 1 kg boneless chicken breasts
- 1 cup yogurt
- 2 tablespoons red pepper paste
- 2 onions (dry)
- 1 whole head of garlic, about 7 cloves
- 1 tablespoon mustard
- 1 tablespoon dried coriander
- 1 tablespoon apple cider vinegar
- 1 tablespoon white vinegar
- 1 teaspoon mahaleb
- 1 tablespoon mastic
- Hot chili (shatta) to taste
- 1/2 cup orange juice
- Olive oil
- A pinch of black pepper
- A pinch of ground cinnamon
- A pinch of chicken seasoning (poultry spice)
- A pinch of ground cloves
- Note:
- To get restaurant-style shawarma that is not dry... add 1 tablespoon of ghee while cooking.

Method
- Wash the chicken breasts well and cut them lengthwise into strips suitable for shawarma.
- Place the chicken in a colander and set aside.
- In a blender, put the yogurt and red pepper paste. If red pepper paste is not available, you can use 1 tablespoon paprika or one red pepper...
- Blend the yogurt and red pepper paste with the onions, garlic, mustard, coriander, white vinegar, apple cider vinegar, mahaleb and lightly crushed mastic... Blend, then finally add a little olive oil and the remaining spices.
- Pour the yogurt-and-spice mixture over the sliced chicken and mix well... Leave the chicken marinated in this mixture for at least 24 hours before roasting it in the oven.Timers: 1440 min
- You can prepare the chicken shawarma marinade and freeze the marinated chicken in the freezer for up to two weeks.
- Note:
