Chicken Musakhan

Chicken Musakhan is a very popular Palestinian dish beloved across the Arab world. There are many ways to prepare this dish; this version is one of the easiest.

Ingredients

  • Boiled chicken, deboned, with spices
  • Onion wedges
  • Sumac
  • Salt
  • Black pepper
  • Dash ground cinnamon
  • Pinch ground cardamom
  • Pinch ground ginger
  • Olive oil
  • Maraqoq bread (thin flatbread) or any Arabic flatbread

Method

Follow the cooking sequence without leaving the page.

  1. Boil the chicken and remove the bones. Fry the sliced onions in oil until soft, then add the spices, sumac, and the shredded boiled chicken.
  2. Toss the chicken with the onions and spices for a while, then set them aside....
  3. Cut the saj bread into triangles and place a suitable amount of the chicken-and-onion filling in each. Roll the stuffed triangles into rolls or small sandwiches and arrange them on a baking tray.
  4. Brush the Musakhan sandwiches with a little olive oil and a sprinkle of sumac. Bake the tray in the oven until the Musakhan sandwiches are browned.
