Ingredients
- 1 kg chicken breast, boneless (skin removed or bone removed)
- lettuce for serving
- Chicken marinade:
- 3 tablespoons yogurt
- 3 tablespoons oil
- 1 tablespoon garlic powder
- 1 medium tablespoon paprika or sweet red pepper powder
- 1 medium tablespoon turmeric
- 1 medium tablespoon dried oregano
- juice of 1 small lemon
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- For preparing the mozzarella:
- thick slices of mozzarella cheese
- or
- can be replaced with kashkaval (qashqawan) provided the slices are thick or several thin slices stacked together
- 1/2 cup flour
- 1/2 teaspoon garlic powder
- 1 teaspoon paprika or sweet red pepper powder
- a pinch of black pepper
- 1 egg
- 1 tablespoon liquid milk
- a pinch of salt
- 1 cup crushed crackers mixed with 1 teaspoon turmeric
- Sauce:
- 3 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon mustard
- 1 tablespoon yogurt
- 1 tablespoon very finely chopped pickled cucumber (pickle relish)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- a light pinch of salt

Method
- Slice the chicken breast into cutlets and marinate them — preferably overnight.
- Prepare the cheese slices: mix the flour with the spices in one bowl, whisk the egg with the milk in a second bowl, and place the crushed crackers in a third bowl. Begin by dipping the cheese slices in the flour, then the egg, and finally the crackers, repeating the process a second time for the same cheese slice.
- Keep the cheese slices in the freezer/refrigerator until ready to use — it is necessary to freeze them so they firm up. Place each slice alone between two pieces of plastic wrap.
- Prepare the sauce: mix all its ingredients well together and keep it in the refrigerator until use.
- Now prepare the burgers: fry the marinated chicken slices in a little oil over medium heat.
- In a pot, fry the frozen cheese slices in plenty of hot oil until they become golden, then remove them immediately.
- Toast the burger buns slightly in the oven or on a pan on the inside after splitting them.
- Spread a little sauce inside the bun on both sides, then place the chicken pieces, then a little shredded lettuce, then a fried cheese slice, then some more lettuce and sauce.
