Ingredients

  • 1 kg chicken breasts or a whole chicken, cleaned and cut
  • 1 kg potatoes, peeled and sliced into rounds
  • 1 tbsp sweet pepper paste (or concentrated red pepper paste)
  • 1 tsp ground black pepper
  • 1 tsp white pepper
  • 1 tsp turmeric
  • 3 tbsp vinegar
  • ½ cup olive oil
  • Salt, to taste

Method

  1. Make small incisions with a knife on all sides of the chicken pieces to allow the marinade to penetrate.
  2. Add the washed, drained potatoes sliced into rounds and put them with the chicken.
  3. In a bowl, mix all the marinade ingredients and add to the chicken and potatoes, tossing well so every piece is coated.
  4. Leave them in the refrigerator for about one hour.
  5. Place them on a tray and bake in a preheated oven at 200°C for 40 minutes, or according to your oven.
    Timers: 40 min
  6. Do not cover the chicken and potatoes so they roast properly and the top dries out.
  7. Brown the top of the chicken and potatoes and serve immediately with bread, rice or plain.
