Ingredients

  • One cauliflower (head)
  • 1 large onion
  • Oil (for sautéing)
  • 2 ripe tomatoes
  • 1 tablespoon tomato paste or tomato sauce
  • Salt
  • 1 cup water
  • 1 cup coarse whole-wheat bulgur

Method

  1. Cut the cauliflower and set it aside.
  2. Chop the onion and sauté it in oil until golden, then add the cauliflower and gently stir so the florets keep their shape.
  3. When it wilts, add the finely chopped tomato, the tomato sauce, and salt.
  4. Stir a little, then add water.
  5. Let them boil for a few minutes.
  6. Add the bulgur, reduce the heat, cover the pot, and let them cook.
