Ingredients
- One cauliflower (head)
- 1 large onion
- Oil (for sautéing)
- 2 ripe tomatoes
- 1 tablespoon tomato paste or tomato sauce
- Salt
- 1 cup water
- 1 cup coarse whole-wheat bulgur

Method
- Cut the cauliflower and set it aside.
- Chop the onion and sauté it in oil until golden, then add the cauliflower and gently stir so the florets keep their shape.
- When it wilts, add the finely chopped tomato, the tomato sauce, and salt.
- Stir a little, then add water.
- Let them boil for a few minutes.
- Add the bulgur, reduce the heat, cover the pot, and let them cook.
