Baalbek-Style Fatayer

Baalbek-style fatayer is a famous pastry in Baalbek, Lebanon. The meat-filled version is loved across many Lebanese regions. Here is the authentic Baalbek-style fatayer recipe.

Dough ingredients:

1 kg flour

1 cup milk

1 cup warm water

1 1/2 teaspoons salt

1 teaspoon sugar

2 tablespoons butter

1 egg

1/4 cup oil

1 tablespoon instant yeast

How to make the dough:

Mix all the ingredients and knead well until you get a normal dough. Let it rest and rise for about an hour...

During kneading you may need to add more water or flour as needed.

Fatayer filling:

1 kg minced beef

1/2 kg onions

1/2 kg tomatoes

hot pepper or chili to taste

Pinch of cinnamon

Method

Follow the cooking sequence without leaving the page.

  1. Mix all filling ingredients. Roll the dough on a lightly floured surface, cut the dough into circles as shown in the accompanying image. Place a little filling in each circle and seal the edges.
  2. Bake the fatayer in a preheated hot oven until the meat is cooked and the dough browns.
  3. Mix all the ingredients and knead well until you have a regular dough... Let it rest and rise for about 1 hour...
