Ingredients

  • 5 cups white flour or 625 grams
  • 6 eggs or 335 grams
  • 1/2 cup sugar, or 90 grams
  • 315 grams butter
  • 2 tablespoons yeast
  • 1 teaspoon salt

Method

  1. Place the eggs straight from the fridge in a deep bowl and mix them with the flour, yeast, sugar, and salt.
  2. Knead well for 6 to 8 minutes, until you have a firm dough.

  3. Then add the frozen butter pieces and knead well until the dough becomes soft and slightly sticky.
  4. Leave the brioche dough to rise for 2 hours, until it has rested well.

  5. After 2 hours, knead the dough again and place it in the fridge until the next day.
    Timers: 120 min
  6. The next day, shape the dough as desired into the brioche form you want, then leave it to rise again for 1 hour or more.
    Timers: 60 min
  7. Bake the brioche in a preheated oven at 170°C for 15 minutes.
    Timers: 15 min
  8. You can fill the brioche bread with chocolate or raisins, as desired.
