Ablma Stuffed Zucchini in Yogurt
Ablma in yogurt — one of the tastiest and lightest zucchini dishes. You can make it with goat or cow yogurt according to taste; cooked yogurt is delicious either way.

Ablma in yogurt... many people love ablma, especially when served with cooked yogurt.
Ingredients
- 2 kg zucchini
- 500 g ground meat
- 2 onions
- 1 kg yogurt (goat or cow)
- 3 tbsp cornstarch
- 1/2 cup water (to dissolve starch)
- Cinnamon for the filling
- Black pepper for the filling
- Salt, to taste
- Oil

Method
- Wash the zucchini and pierce it without removing too much of the flesh, leaving it thick.
- Wash it again and place it in a colander to drain the water from inside.
- Prepare the filling: sauté the finely chopped onion in a little oil until it softens.
- Add the meat and fry it until it dries, then add the spices and salt, stir, and set the filling aside to cool.
- Stuff the zucchini and close them with the flesh pieces, then fry them briefly in hot oil or in a little oil according to preference until they take a light golden color.
- Then place them in boiling water and boil to finish cooking and to remove any remaining oil that would change the color of the yogurt if left.
- When the zucchini are cooked, drain them from the water.
- Mix the yogurt with cornstarch dissolved in water, and add salt to taste; put them in a pot over the heat while stirring.
- When the yogurt mixture boils and thickens slightly, add the zucchini and let them simmer for only a few minutes, then turn off the heat. Alternatively, you can set the zucchini aside and, when serving, place the zucchini on a plate and pour the hot yogurt over them.
- Serve vermicelli rice alongside the Ablma zucchini in yogurt.
