Ingredients

Start here, then move straight into the method.

  • Half a kilogram of large beef chunks
  • 200 g ground beef
  • Oil or ghee as desired
  • Salt
  • Seven-spice blend
  • 2 cups basmati rice, soaked for 6 hours
  • Aromatics for simmering the beef (cinnamon, nutmeg, cloves, loomi, bay leaves, ginger, dried coriander, black pepper)
  • 1 tablespoon mansaf spice
  • or
  • 1 teaspoon cinnamon, 1/2 teaspoon sweet spice, and 1/2 teaspoon black pepper
  • 1 large dry onion
  • 1 cardamom pod
  • 1 celery stalk
  • Nuts to taste (for garnish)

Method

Follow the cooking sequence without leaving the page.

  1. Put a little oil or ghee in a pot over the heat and fry the beef pieces until browned on all sides
  2. Cover the meat pieces with water and add the seasonings plus the onion, celery, carrots, and a pinch of salt
  3. When the water boils, cover the pot and simmer over low heat until the meat is well cooked
  4. In a second pot, put a little ghee with the drained rice and the special mansaf spice blend and stir
  5. Add the meat cooking liquid at a rate of two cups of liquid for each cup of rice
  6. When the water boils and reaches the level of the rice, lower the heat and cover the pot until the rice is cooked... Basmati rice usually needs about 20 minutes

  7. Meanwhile, fry the ground beef in a little ghee; add a pinch of salt and the seven-spice blend, and stir until cooked
  8. Use a cheesecake mold: place a portion of rice in the bottom, then the fried ground beef, and finally a layer of rice
  9. Invert the mold onto a serving platter, arrange the large meat pieces on top, and garnish the beef mansaf with nuts as desired
