Ingredients

  • Long whole-wheat pasta, or any shape you prefer
  • Chicken breast
  • Peri peri (African hot pepper) or
  • Chicken seasoning
  • A pinch of salt
  • 1 tablespoon olive oil
  • Onion, cut into wedges
  • Colored bell pepper, thinly sliced as desired
  • 1 tablespoon pesto sauce

Method

  1. Boil the pasta until cooked, then drain it and reserve a little of the cooking water.
  2. In a pot or large skillet, sauté the thinly sliced chicken breast and add the spices, salt, and olive oil and stir.
  3. When the chicken slices change color, add the onion wedges, stir, and let them cook over low heat.
  4. Then add the colored bell pepper slices and stir until the peppers are cooked.
  5. Finally add the cooked pasta with only a little of the pasta cooking water and the pesto sauce and stir.
  6. Let the healthy whole-wheat pasta simmer over low heat for a few additional minutes, then serve.
