Ingredients

  • 5 garlic cloves
  • a piece of fresh ginger
  • green and red chili peppers
  • 1 onion
  • a drizzle of oil and 1 teaspoon butter
  • cleaned, washed and drained shrimp
  • coarsely chopped spinach leaves
  • a pinch of salt
  • a pinch of sugar
  • a pinch of black pepper
  • a pinch of ground cumin
  • a pinch of ground ginger
  • juice of 2 lemons or oranges
  • cooked/boiled pasta
  • boiled carrots
  • boiled broccoli
  • grated mozzarella cheese

Method

  1. Finely chop the garlic, ginger, pepper, and onion.
  2. Sauté them in a little oil and butter for one minute, then add the shrimp and sauté until cooked.
  3. Add the spinach leaves with a pinch of salt, sugar, spices, and orange juice and sauté for two minutes.
  4. Add the pasta and the boiled vegetables last and sauté so they brown slightly in the pan.
  5. Serve the shrimp pasta immediately with a sprinkle of mozzarella on top.
