Kibbeh in a Tray
Kibbeh in a tray is one of the tastiest and easiest kibbeh recipes. It takes less time to prepare than making individual patties, and we recommend serving it with any kind of lentil soup.
Ingredients

- 400 g fine bulgur, soaked in warm water for 15 minutes
- 500 g mashed kibbeh meat
- an onion
- 1 tablespoon kibbeh spice
- 1 teaspoon cinnamon
- a few leaves of basil, mint, and marjoram
- salt
- 2 tablespoons ghee for the top
- Filling
- 300 g ground meat
- oil
- a small onion
- 1 tablespoon pine nuts, optional
- 1/2 teaspoon salt
- 1/2 teaspoon sweet spice
- 1/2 teaspoon sumac
Method
Follow the cooking sequence without leaving the page.
- Start by preparing the kibbeh dough: drain the bulgur well, then knead it with the mashed kibbeh meat.
- Chop the onion and place it in the electric processor. Add the kibbeh spice, cinnamon, basil, mint, marjoram, and salt, and blend until smooth.
- Add the bulgur and meat to the onion mixture and blend again until you get a firm kibbeh dough.
- Prepare the filling: finely chop the onion and sauté it in a little oil until softened, then add the ground meat and stir until cooked.
- Add the spices, salt, sumac, and pine nuts and stir briefly, then turn off the heat.
- Set the filling aside while you spread the kibbeh in the tray.
- Divide the kibbeh dough into two portions and spread the first portion evenly in an oiled tray. Moisten your hand with water whenever needed to press the meat mixture evenly across the whole base of the tray.
- Distribute the filling evenly, leaving a few centimeters uncovered around the edges.
- Prepare the top layer: roll out the second portion of kibbeh dough on a sheet of plastic wrap until it matches the size and shape of the tray.
- Flip it over the filling in the tray and seal the edges together.
- Moisten your hand with water and smooth the surface until it is even.
- Wet a knife with water and score the kibbeh as desired, then garnish with almonds or as desired.
- Spread 2 tablespoons of ghee over the top, then bake the tray in a preheated oven at 180 C for 30 minutes, placing it on the lower rack and checking until the base is cooked through.Timers: 30 min
- Brown the kibbeh in the tray from the top for 5 minutes, then serve.Timers: 5 min
